About two years ago, I decided to share some recipes of a traditional Jamaican meal with my students in Japan. It was the typical Sunday dinner scene – Rice & Peas with Baked Chicken. I wrote the recipe in English with some Japanese vocabulary. Afterall, I was teaching English, so English it was. However, when my students complained that they could not understand…Aka, could not bother to try and understand, I decided to type it in Japanese. Did anyone of them try it? Not one, at least not while I was there.
One teacher tried it at home and, such a relief to me, it worked. She said she love it. So as a foodie, and as I reassess my virtual assistant business direction, I have decided to focus on food. I want to share this recipe with you. If you this simple recipe, please give me your hones opinion.
I am also considering writing a recipe book of all the experiments I have done over the years. Here are the recipes, as submitted to my dear students in Okinawa, Japan. You will see then in English and terrible Japanese (ごめんなさい).
Can You Cook Jamaican Food? ... Well, can you? Your assignment, should you choose to accept it, is to cook this traditional Jamaican Sunday dinner. A. Jamaican Rice and Peas Canned kidney beans..............100~150 ml Rice (white or brown)............2 cups Canned coconut milk...............3 cups Green onions/scallion..............1 small stalk Thyme...........................................1 sprig Crushed ginger (optional).............2 ml Habanera or chili pepper..............1 small Teaspoon salt....................................2.5 ml Teaspoon sugar................................5 ml 1. Put all the ingredients in your rice cooker. 2. After the rice is cooked, throw the scallion, thyme, pepper and ginger away. B. Oven-Fricasseed Chicken About 500 g chicken (cut into pieces), cleaned and washed, pat dry Marinade: Salt.......................2 teaspoon Black pepper.....1/2 teaspoon Garlic powder....1/2 teaspoon Sugar....................1 teaspoon Vinegar................10 ml Oil..........................20 ml Sauce: Chicken stock...100 ml Apple vinegar....20 ml Ketchup...........50 ml Sugar............1 teaspoon Butter............1 tablespoon 1. Season the chicken with the marinade. 2. Marinate the chicken for about 1 hour in the fridge. 3. Turn on the stove. Medium heat. 4. Put a sauce pan on the stove. Add the butter. 5. Mix the sauce ingredients together. Pour into pan. 6. Simmer for about 10 minutes. 7. Preheat your oven for 10 minutes at 190ºC. 8. Turn the stove off. Let the sauce cool. 9. Put a grill in a pan. Put the chicken on the grill. Put in the oven. 10. Oven temperature: 190ºC. Bake the chicken for 35 minutes. 11. Remove the chicken from the oven. Let it cool for 10. Serving: 1. Jamaican rice and peas with chicken. 2. Pour a little of the sauce over the chicken. 3. ENJOY with your favourite salad! 日本語で: A. Oven-Fricasseed Chicken (オーブンベイクドチキン) 500 g 鶏肉 (部位に切り分ける) した味 (混ぜる): しお....................................2 小さじ コショウ...........................1/2 小さじ ガーリックパウダー...1/2 小さじ 砂糖....................................1 小さじ 酢.......................................10 ml 油.......................................20 ml 1. 味付けする:鶏肉に下味 2. 30 分間に味付けする。 3. コンロ:中火 4. コンロにフライパンを入れてください。ソースを追加してください。 5. 煮る:約 5 分間。 6.余熱する:190ºC. オーブン10分間. 7. 鶏肉をグリルに入れてパンに入れる。 8. オーブンで焼く。190ºC。35 分間。 9. ベイクチキンをオーブンから取り除いてください。 個々の人の皿において: 1. Please note, these ingredients are not the rule, this version is one of many that I have used. In my opinion, cooking should be fun and flexible. Cooking is more forgiving than baking. Baking is a bit more precise. So, try these, and let me know how they turned out. Share pictures if you can.
